DRBC Agar, based on the original formulation by King, Hocking, and Pitt, is used for the enumeration of viable yeasts and molds in beer and other products with high water activity. The antifungal agent Dichloran restricts growth of mucoraceous fungi and reduces colony size of other spreading fungi. Rose Bengal and Chloramphenicol serve as selective agents against bacteria, contributing the former to reduce colony size of fast-growing molds. Enzymatic Digest of Animal Tissue and Peptone supply nitrogenous sources, while Glucose is the fermentable carbohydrate. Agar is the gelifying agent.
