Violet Red Bile Glucose Agar is used in the detection and determination of all Enterobacteriaceae in food. The Enterobacteriaceae family includes lactose-fermenting coliforms and non-lactose fermenting species like Salmonella and Shigella. Pancreatic Digest of Gelatin and Yeast Extract provide nitrogen, vitamins, minerals and amino acids essential for bacterial growth. Dextrose is the fermentable carbohydrate. Coliforms lower the pH of the medium by fermenting this sugar, thus causing their colonies to look red due to the presence of Neutral Red Dye. Crystal Violet and Bile Salts inhibit the growth of Gram-positive microorganisms. Bacteriological Agar is the gelifying agent and Sodium Chloride maintains the osmotic equilibrium.
